Yang Chow Fried Rice Recipe

Yangzhou fried rice, Yangchow fried rice, or Yeung Chow Fried rice is a popular Chinese-style wok fried rice dish in many Chinese restaurants around the world. This is one of the very popular china dishes around the world, especially in UK and US.

It is often offered in the UK as special fried rice and in the US as house fried rice. There are two ways of cooking the dish concerning the preparation of this egg.

The first variant is called “silver covered Gold”, where the egg is scrambled separately before mixing with rice. The choice “gold covered silver” procedure is called pouring the liquid egg over the lettuce and rice mix and skillet both together.

The choice of oil for fried rice plays an important role to produce the authentic Asian flavor. Oils Appropriate for stir-frying are they have a high smoking point that is Appropriate for stir-frying along with a neutral flavor which won’t influence the flavor of the fried rice.

Ingredients for Yangchow Fried Rice

  • 2-4 tbsp neutral oil
  • 4 large eggs lightly beaten
  • 4 links Chinese sausage diced, about 1 cup
  • 1/2 medium onion diced
  • 100gm raw small shrimp peel and deveined
  • 4 cups cooked rice
  • 2 green onions thinly sliced
  • 1-2 cups shredded lettuce if desired
  • 1 tsp salt or soy sauce or to taste

Instruction for Yangchow Fried Rice

In a large skillet or wok, heat up a bit of oil over high Warmth and scramble your eggs until mostly set, but still slightly runny. The eggs will cook a little longer when you inhale everything together at the end. Remove and set aside in a bowl.

Crisp up the Chinese sausage over medium high heat, cooking until slightly browned, stirring occasionally. You shouldn’t need to add oil to the pan as the Chinese sausages will render out a bunch of fat, but if they’re sticking, add a bit in. Remove the Chinese sausage from the pan and add it to the bowl with the eggs.

Saute the onions for 1-2 minutes in the rendered fat, stirring occasionally. Add a little bit of oil to the pan if necessary and cook the shrimp with the onions very temporarily, until just opaque and cooked through. Remove from the pan and then pop it in the sausage and egg.

Heat up 2 tbsp of oil from the pan and add the rice. If You are using rice from the fridge, it’s ideal to break it up with slightly moist hands before putting in the pan. Fry, stirring occasionally until the rice is heated and crispy through.

Add the eggs, sausage, fish, poultry, lettuce, and green Onions and toss everything together so that everything is equally distributed. Season with salt or soy sauce and enjoy hot!
